Elk Chili

I put that elk meat to use! I signed up for a chili potluck at work and very much regretted it as the day approached and canning season still hadn't ended.

I defrosted elk tenderloin and pressure cooked it until it was nicely tender. Then I pressure cooked kidney beans. My pressure cooker is one of my favorite bridal shower gifts. No recipe of course, but the ingredients were as follows:

2-ish pounds (pre-cooked weight) of cooked meat chunks
Broth from cooking
1 1/2 C dried kidney beans, cooked
2 cans tomato sauce
1 large onion, chopped
4 jalapenos, diced, with a few seeds left in
Brown sugar - 1/2 C?
Garlic powder - approx 1 Tbsp?
Chili powder - approx 1 Tbsp
Salt - 1 tsp?

Simmer on low heat for 1 hour, stirring occasionally.

I was very pleased with the results. It was thick, sweet, and had a bit of kick.

Wow - you are amazing. So your pressure cooker - is that the same thing that you can use to can vegetables? I haven't ever used one before.

That's so awesome that you got all that free elk meat! We're getting some free moose meat this weekend, but not very much. (A guy at our church shot one and has 626 lbs of meat on his hands...) I have no idea what we're going to do with it!

I've always wanted a pressure cooker, but I'm also kind of scared to use one.

Way to go. We love elk meat. When I was a kid,my mom even went hunting and brought home an elk of her ow almost every year. Wild meat made up a big part of our diet. I now have certain kinds I prefer like a spike which a yearling bull and a diet I prefer they eat. LOL My favorite deer were those harvested off the grain and alfalfa hay fields. Enjoy!! Wild meat is another adventure to cook.
