Potato bread

Last night's recipe was potato bread. It was a busy day though, and I fear this recipe suffered because of it. I was in a hurry so I didn't add gluten although I normally would have. It rose too long in the second rising and then fell (3 risings, sheesh!) because we were down at the church, cleaning and setting up chairs.

It turned out a bit short and heavy even though I didn't substitute any whole wheat flour. I read this morning that potato breads often don't have enough gluten because of the potato/flour ratio. I only tasted a bite, but I don't like it. I don't like white bread though, so I'm not a good judge. My taste-testers will be anyone at church today (sacrament bread) and Nathan. **I got a couple of positive comments on this bread from church-goers.


On a side-note, I was folding laundry yesterday and wanted to share this. Many of my towels are hand-me-downs, although I do have some matching ones from wedding gifts. When my dad tried to throw out some old towels when I was a teenager, I saved them. I'm a bit nostalgic. I use them now. One day I noticed that a tag with my oldest sister's name was stitched onto one towel. Turns out, she took it to camp one year. How's that for well-made...20+ years later, this hand towel's still in good shape.

Adam agrees, this was the best bread he's had so far...but keep them coming, we ALWAYS love to be your tasters.
