Yummy dinners

I love when I have a whole week full of good food! Here's the menu plan for this week. I had quite a few things in the freezer so it was an easy week.

Saturday - Chinese chicken salad (lettuce, leftover chicken, mandarin oranges, water chestnuts, crunchy noodles, Chinese dressing)

Sunday - Balkan meatballs and sauce (from the freezer, OAMC cookbook recipe, they have nutmeg in them), rice, green beans

Monday - pork roast rubbed with olive oil and citrus/basil seasoning, diced potatoes tossed with garlic powder / oil and baked, butternut squash with honey

Tuesday - Chicken and rice (b.s. chicken frozen in a marinade of crushed pineapple, apple cider vinegar, teriyaki sauce, dried onions; defrosted and baked on pre-cooked brown rice), steamed carrots

Wednesday - Meatloaf (from the freezer, Italian flavor) and corn

Thursday - Sausage, potatoes, and onions fried up together, steamed carrots

Friday - either haystacks (I still have crunchy noodles) or other leftovers

Items not bought on sale:
crunchy noodles
brown rice (I buy in bulk though)
apple cider vinegar

Everything else was on sale, including the vegetables, either this past Saturday, or in my pantry from prior sales. Gotta love food storage!

If you can do it, with your busy schedule, then your MA and PA should be able to do it, too.
What an inspiration you are to us!!
