Peanut butter cookies


I may have posted this recipe before.  It's an easy recipe to fall back on when you're short on time or ingredients.

Peanut Butter Cookies


1 C peanut butter (crunchy or smooth)
1 C sugar
1 egg


Mix together all three ingredients.  It helps if the peanut butter is at room temperature.  Grease your hands.  Roll the cookies into 1 inch balls (should make 12-14 cookies).  Dip a fork in sugar (dip it in water or run it over a cookie first).  Lightly press down on the cookies to make grid marks.


Bake in preheated 350 degree oven for 10-12 minutes.  Cool on cookie sheet for 1-2 minutes before moving to a rack.  They will be crumbly until they cool.


This recipe is great if you're out of flour, if you're baking for a gluten-free person (we have a couple youth at church who can't eat gluten), or if you just need a super easy recipe.  I can whip up a double batch in no time and I always get compliments.

Thanks - I find myself going a little crazy sometimes when I need to come up with a gluten-free dessert. Luckily I don't have to very often - all I can come up with are no-bake cookies. And who can resist PB? Certainly not me!
