Pancakes and waffles both make my stomach hurt. Occasionally I decide it's worth it. I still have cooked pumpkin in the fridge so I searched the internet for pumpkin whole wheat pancakes. I found a great recipe here.
I was not disappointed - yum! Nathan thought they were a bit heavy. I did use all hard wheat flour. Soft flour or the recipe's listed cake flour would have helped. A half batch was perfect for me and Nathan. I had a partial jar of apple-cinnamon syrup in the fridge, which was a good match. I'm sure molasses or maple syrup would have also gone well with these lightly spiced pancakes.
