Toffee brownies
I'm a brownie snob. I don't like most people's brownies. Oddly enough, I prefer brownies from a mix, not from scratch. I like the Pillsbury mix with an entire bag of chocolate chips, slightly underbaked. I've been unhappy with multiple brownie recipes. Monday night, however, I made some tweaks to one and was satisfied, although not in love. Since I'm so picky, if I was satisfied, it must be acceptable enough to share. :-) I don't even have a picture, because we had a friend over and they disappeared SO fast!
Toffee Brownies
1/4 C butter, melted or very soft
1 C sugar
1/3 C cocoa
1 tsp vanilla
1/2 C flour
dash of salt
2 eggs
2-4 squares of a milk chocolate candy bar
toffee chips
Mix together the butter, sugar, cocoa, and vanilla. Add the salt, flour, and eggs. Pour into a greased 8x8 pan. Cut the chocolate squares into small pieces and sprinkle on top. Sprinkle toffee chips on top until the entire surface is lightly covered.
Bake in preheated 325 degree oven for 25-30 minutes, until they begin to pull away from sides. Will look under-baked. Best eaten warm and slightly gooey.

Oh man, this sounds so good! My favorite brownie has always been under cooked, with chocolate chips and chocolate frosting. I'll have to try the toffee!
I prefer mixes too! I can't ever seem to make a brownie from scratch that tastes great. Have you tried Ghiradelli double chocolate? If not, you should!! YUM!!
