I added a spot in the sidebar to keep track of this year's canning.
This is what life looks like around here.
I bought 58 lbs of peaches on sale and then decided it wasn't enough and bought an extra 33 lbs. We've had several sources of free apricots, some better than others.
I was blessed to be given a steam juicer and a strainer (to make puree/sauce), as well as several dozen jars. I'm loving the steam juicer! Nathan said the juice tastes like Kern's nectar. I'm taking that as high praise!
All this canning means I'm not getting enough sleep though. Yesterday I finally gave up and came home an hour early. Took a 2 1/2 hour nap, picked apricots, and gave up for the night.
I decided to make peach salsa, found a yummy recipe, and bought the two ingredients I didn't have. Then I learned you aren't supposed to can salsa in quarts and I had no pints. Ended up freezing it and eating lots fresh - so good!

Wow - where did you get all those peaches??? And you'll have to get me the recipe for the apricot vanilla butter - sounds delicious. Our apricots are probably going to be ready for picking next week, but we didn't spray the tree this year, so they aren't as beautiful as usual and have spots on them. Oh well - lesson learned for next year.
I got them from Rancho Markets at 33 cents a pound. They are SO juicy and flavorful. I was very pleased.
That peach salsa looks so good!
Wow, you've been busy! I've only tried doing freezer jam, but one day I'm going to get ambitious enough to do some canning. You're certainly getting me antsy to do some canning. :)
Cheers,
