Chocolate-Dr. Pepper cake

I'm not claiming this is healthy, but it sure is good! I needed to make a last-minute dessert with what I had on hand, and I found this recipe to tweak.



Chocolate-Dr. Pepper Cake

Mix together:
2 C white flour
2 C sugar
1 tsp baking soda
1 tsp baking powder
dash salt

In a saucepan, mix:
3 Tbsp cocoa (I use Dutch cocoa)
1/2 C butter
1/2 C oil
1 C Dr. Pepper (You can use caffeine-free)

Heat until boiling. Remove from heat.

Stir in until melted:
1 1/2 C mini marshmallows

Mix together:
The dry ingredients
The above liquid mixture
2 eggs
1/2 C buttermilk
1 tsp vanilla

Bake in greased 9x13 pan at 350 degrees for 30-35 minutes.

While it's baking, make the icing and frost the cake as soon as it comes out of the oven.

Icing:

1/2 C butter
1/4 C dark chocolate chunks
3 T Dr. Pepper

Heat until boiling.

Mix in approx. 1 lb. powdered sugar until you think the consistency is good. It should be soft.

Frost the cake. After it cools about 10 minutes, sprinkle it with pecans, toffee chips, or chocolate shavings. (I did sections of each!)

My husband LOVES Dr. Pepper and chocolate so I'm sure he'd love this cake! I might have to make it for him.

So, can you taste any Dr. Pepper flavor? Or does it just keep the cake moist?
